How do I prepare cocoa?
1. Heat water to 70–80 °C
Let your boiled water cool down a bit, as water that is too hot can damage the delicate compounds in the cacao and cause bitterness.
Avoid milk, as it masks the subtle nuances of cocoa; water, on the other hand, allows them to fully develop.
2. Prepare your tools
Pour hot water into the chawan (bowl) and dampen the chasen (bamboo whisk) to soften the bristles. Then pour the water away.
3. Make a paste
Place the cacao in your ceremonial bowl or cup. Pour in a small amount of warm water and stir until a thick paste forms.
4. Knock and activate
Gradually add the remaining water while whisking vigorously with a chasen or whisk. Whisk until the drink is smooth and slightly frothy.
Tip: If you find the cocoa too bitter, use a little less. Sweeteners alter the flavor profile, while a smaller amount of cocoa allows you to adjust and brings out the natural nuances better.
